A Rum Business for adventurous Imbibers opens the door to the luxurious exotic world of Don Papa, a high end rum maker from The Philippines
When I was a lad, Rum was something to be had with lashings of coke and most probably it’d be white and possibly not something to savour on its own merits. Dark rums seemed to be for rough and tough old seafarer types and taken as a navy ration, or patched and parroted pirates to warm their cockles. However, thankfully, things are rather different now and we are lucky enough to have access to refined and exciting offerings such as Don Papa’s Rare Cask.
Don Papa Rum, a premium small batch molasses based rum has unveiled an exclusive premium rum from the wilds of Mount Kanlaon on the Island of Negros, in the Philippines. With its rich volcanic soil and exceptionally warm and humid climate, Negros grows abundant sugarcane which produces some of the sweetest molasses in the world, known locally as ‘black gold’. Sugarcane dominates the economy of the island and 50% of all Philippine sugar is from here. Sugar has been grown on the island for centuries, though it only became an industry in the 1850’s. It is grown from September to May before being cut by hand using traditional methods.
Distilled from the original Noble sugarcane, this rare batch of rum has been aged for several years in carefully selected over roasted and toasted American Oak casks, which impart a rare complexity of flavours. Each cask is hand selected by Don Papa’s Master Distiller, who has chosen to keep the rum unfiltered and unblended, bottling at 50.5% ABV to retain the unique quality and flavours.
Rich and powerful on the nose, smooth and fruity on the mouth, with a long, long, and fresh finish, Don Papa Rare Cask has a dark amber colour and offers rich, complex flavours of oak, cacao, and fruitcake, with a surprising hint of fresh mint on the finish. With its bolder taste, Rare Cask brings an intriguing new facette to the Don Papa family, already including the original Don Papa and the Don Papa 10-year-old Limited Edition.
With only 6,000 numbered bottles signed by the Master Distiller being made available globally, this rare and unique rum is packaged in a beautifully presented wooden canister, with intricate details of Don Papa’s island home and Papa Isio, the famed local revolutionary and shaman that inspired this premium sipping rum from the Philippines.
So whether your penchant is straight with a little ice, or perhaps your rum tipple is in a Negroni or (my personal favourite) a Hemmingway Daiquiri or any other cocktail indeed, I’m certain, this will not disappoint. I sampled it at the remarkable premises of TT Liquor in East London recently and can only say that I enjoyed every sip and not a yo-ho-ho in sight!
