So Gentlemans Butler went along to enjoy, and enjoy is exactly what happened. This is definitely an updated approach, responding to our increasing appetite for both a healthier option but responding to the approach of sense which is eating produce that is sourced more locally.

While the idea of seasonality is expected in the approach of any high calibre restaurant, until now it has been conspicuously absent from afternoon tea menus. The Langham’s SeasonaliTea at Palm Court will feature savouries, scones and patisserie all created with the very best ingredients when they are at their absolute peak, meaning the flavours are sublime and you really do notice the difference.

Focusing on seasonal ingredients the SeasonaliTea offering will change as the best produce comes in. As part of the focus on flavour, the patisserie created by Executive Pastry Chef Andrew Gravett is lighter, with a reduction in the use of refined sugars and fat, without compromising on the indulgent taste or texture of the cakes.

The presentation of SeasonaliTea is still elegant and contemporary, but not over-elaborate. ‘I think there has been a real emphasis on the artistry of afternoon tea in recent years, often at the expense of flavour’, says Gravett. ‘We wanted to redress that balance, and, by using brilliant seasonal ingredients, our SeasonaliTea will be as pleasing to the palate as it is to the eye, we believe.’

For its launch, summer delicacies served will include sandwiches with seasonal fillings such as Cackleberry Farm egg, marinated artichoke and summer truffle, while the selection of five sweet treats will include ‘Chouxtime’, using the ‘La Burlat’ variety of cherries and ‘Rolled into One’, with Oakchurch Farm strawberries and Madagascan vanilla. Where possible the chefs will work with locally-sourced ingredients, but for some recipes more exotic ingredients from further afield will be used to achieve a perfect balance of flavours.

The idea of seasonality will encompass every element of the afternoon tea experience within the chic surroundings of Palm Court. SeasonaliTea means the selection of teas offered changes too, so they complement the changing menu, and Palm Court will also feature stunning seasonally-changing floral displays. The Langham, London was the first hotel to serve afternoon tea when it opened in 1865, and continues to maintain its reputation for innovation with the recent relaunch of Roux at The Landau and the opening of The Wigmore, the modern British Tavern, both within in the last year.
